The Queen has spoken.

Quinoa. Oh, Quinoa. The glorious little grain that has become the staple of my gluten-free diet. I discovered this gem while on the pathway to becoming a healthier, happier and most importantly more comfortable me.  For me, this meant going gluten-free.

I'm sure many of my g-free peeps out there can feel me, removing this integral part of our diet was one of the most difficult adjustments ever. Pasta. Bread. Baked Goods. The lot. All the yummy treats that we so sadly discovered hurt our bodies to digest. So, what's a girl to do? Suffer through life with constant stomach pains? I think not.

No, it was time for my eating habits to change. I realized it was less about elimination and more about adjusting. This was a time for me to explore, experiment and enjoy new foods. Try new recipes, taste new ingredients, cook using new techniques. This is where Quinoa came into the mix.

Along this journey I was fortunate enough to discover Quinoa. The first recipe I made was mixing Quinoa with Latin American flavors, and I have to admit, it really wasn't enjoyable. The texture was off. The flavors were off. Something was missing. I knew this ingredient had potential, I just needed to unleash it. So, like most amateur cooks, I started experimenting. I used Quinoa instead of rice. I used it with Stir fries, with Indian food, in replace of Noodles. It was a revelation. Not only did it taste divine, it was just as easy to make as rice, but more healthy and satisfying.

Quinoa is AMAZING. That's really the bottom line (and point) of this blog. I will share my discoveries, my experiments, tips, tricks and what I have learned along my way to becoming gluten-free. I hope you are ready! Now, let's get to cooking!
