Dairy-free Broccoli, Spinach & Kale Soup
For the past two weeks, the majority of my meals have been in liquid form. Although that may sound quite unappetizing for some, it has become part of my daily ritual. Smoothies in the morning, shakes or soups at night. Granted, I am getting quite sick of the consistency, but I have learned to love these meals. UE86UUJC5KZF

I tried my hand green shakes and let me tell you, I was not impressed or satisfied. I couldn't stand the cold, green, seaweedy flavor that so many recipes have (aside from avocado which is my only green ingredient). So I tried my hand at soup and thought I would share this with you all. Although it's not my favorite or the most delicious, it does the job. It's healthy, packed with fiber, fairly low sodium, Clean, dairy-free, gluten-free and surprisingly filling.

Ingredients:
  • 1 small yellow onion, chopped
  • 1 parsnip, peeled & chopped
  • 1 garlic clove, minced
  • 1 large head of broccoli, chopped into florets (add your stems for more broc flavor)
  • 2 large handfuls of spinach
  • 3 leaves of green kale, chopped (stems removed)
  • 1 cup chicken broth (if you're on Clean make sure there are no tomatoes or corn!)
  • 2 - 3 cups purified water
  • 1 tbsp olive oil
  • 1 tbsp garlic powder
  • 3 tbsp nutritional yeast (gives you a cheesy flavor)
  • Salt & pepper to taste

Instructions:

Heat the oil in a 4-quart saucepan. While your oil is heating, let me take a moment to tell you about my fantastic All Clad saucepan. I don't know if it was new found confidence or simply that these pots are fantastic, but either way I was happy with the result. Now that your oil is hot, add you onion, parsnip and garlic. Cook until the onion is tender and slightly opaque. Add the liquid and bring it to a boil, adding the broccoli, spinach and kale. Stir in your spices and nutritional yeast.

Turn the liquid down and let simmer with a lid for 20 - 30 minutes. Check periodically, until your veggies look cooked and your liquid looks full of flavor.

Transfer the vegetables and broth into a food processor and pulse until smooth.

Serve hot and garnish with more nutritional yeast. Enjoy your meal (fit for anyone living Clean and diary-free)!
