Quinoa Power Breakfast

A powerhouse breakfast packed with my favorite super foods.

Breakfast foods are simply the best. Anytime of day, I will take breakfast over anything else. Maybe it's because I have a wicked sweet tooth or maybe it's just that I grew up eating awesome weekend breakfasts, but either way breakfast is definitely my favorite meal of the day.

Lately, I've been trying to keep my breakfasts simple and green and have avoided heavy, filling, starchy foods. It's been a lot of green juices and green smoothies. Green everything. Even just looking at a green breakfast, I instantly feel healthier. But sometimes it gets a little boring and I get sick of drinking my greens each morning.

What better way to start your day than with a bowl of delicious quinoa? It's simple, it's healthy, it's utterly delicious. I've made quinoa "oatmeal" before, but this bowl is different. This isn't your classic quinoa breakfast. This is a quinoa power breakfast.

We all know that quinoa is a super food. It has all nine essential amino acids, making it a complete vegetable protein. It's packed with nutrients that are integral to your health, like manganese and iron. Oh yeah and it's also a complex carbohydrate meaning that it is absorbed slowly, helping to keep you fuller longer.

Quinoa really is the the best food on earth and is a fantastic way to start your day.

So knowing all that I do about quinoa's super powers, I thought to myself, "What would I get if I added other super foods into the mix?" Well let me tell you, you get a bowl of awesomeness. Chia seeds, almonds, yogurt, fruit, fresh ginger and quinoa make this breakfast totally powerful. I promise you'll feel like Wonder Woman / Superman after you eat this.

This morning I decided I needed that little boost. Something special and unique. Something I'd never made before, but that I knew would be tasty and satisfying. Something that would keep me going through the day, with a smile on my face, knowing I started it off on the right foot.

Quinoa Power Breakfast
serves 1

ingredients:
  • 3 tablespoons dry quinoa
  • 1 medium pear, cored and chopped
  • 2 tablespoons sliced almonds
  • 1 tablespoon organic almond butter
  • 1 tablespoon chia seeds
  • 1 teaspoon fresh ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon stevia
  • 2 tablespoon unsweetened shredded coconut
  • Yogurt to top it off (I use plain almond yogurt, but you could use any kind that you like)


In a small sauce pan, bring 6 tablespoons of water to boil. Add the quinoa, cover and turn down to simmer for 8 - 10 minutes.

When the quinoa is done cooking, combine it with the ginger, cinnamon, stevia and almond butter in a small mixing bowl, stirring gently until the almond butter is almost melted into the quinoa.

Add your sliced almonds, chia seeds and coconut, tossing until well combined. 

Add the pears and gently toss the quinoa mixture, careful not to damage the delicate bites of pear.

Top your quinoa bowl with some yogurt and sprinkle with cinnamon.

Sit back and enjoy the awesomeness of this powerful breakfast!

  2. I'm a breakfast any time of day girl too -- and this would be a great addition to my routine. I too have been on "team green" lately, but this would be nice to add to the menu!

  4. This looks delicious. I make my quinoa bowl with yogurt, banana, peanuts, and stevia. I too feel powerful and superior after a quinoa breakfast.

  6. Wow, this looks awesome, great combo of food! I sometimes have quinoa, avocado, oranges, and pepper - a little weird but delicious! Just found your blog and loving it :)
