The Best Gluten-free and Clean Granola
This is my first time making granola, well gluten-free at least. My parents make the best gluten-filled granola on this planet, but I haven't been able to enjoy it since I went gluten-free 18 months ago. I figured it was my turn to take a shot at whipping up delicious granola. I mean really, what is better than granola?
This recipe is brings together the warm flavors of Fall with VT maple syrup and cinnamon. It is balanced with a hint of the tropics with freeze dried mango pieces and shredded coconut. Easy to make, Clean and gluten-free this granola is now on the top of my breakfast menu.
ingredients:
- 3 cups gluten-free rolled oats
- 2 cups chopped/processed nuts (pecans, walnuts, almonds, hazelnuts, etc.)
- 1/4 cup shredded coconut
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 1/4 teaspoon sea salt
- 1/4 cup melted coconut oil
- 1/4 cup VT maple syrup
- 1 packet organic freeze dried mangoes
Preheat the oven to 300 degrees F.
Combine your dry ingredients (aside from the mango) in a large glass bowl. Stir together so everything is combined.
In a separate small bowl, mix your wet ingredients. Pour them over the gluten-free oats mixture. Using a large wooden spoon, gently fold and stir the granola together until you feel the oats are pretty much coated with the maple syrupy deliciousness.
Spread your granola out on a sheet tray and place in the center of the oven. Bake for 15 minutes and then remove and stir the oats around. Now add you mangoes, stirring them into the baking granola. Bake for another 15 minutes or until the oats are golden brown.
Let cool and serve with fresh berries and almond milk.
