It seems as though I've been hit by the dreaded seasonal flu. Remedies for the annual Fall cold? Warm, soft, sweet and decadent gluten-free treats. Healthy gluten-free baked goods, cure any ailment.
Lately I've been craving cinnamon. I add cinnamon to everything. My dairy-free smoothies each morning, my granola snacks, and everything baked. I found this fabulous gluten-free recipe on TastyKitchen and am completely hooked. Thanks to Jenni Huelet, I have found a gluten-free baked good that is incredibly healthy, but so yummy!
Almond meal is my discovery of the week. Simple and easy to make, tasty and packed with flavor, and healthy. All you have to do is process raw almonds in a food processor for a few minutes and voila! You have a heavenly soft, crumbly, flour-like substance. Perfect for gluten-free baking.

Gluten-free Apple Ginger Scones
I am so happy to have found this amazing recipe. The dough is made of almonds, with just a dash of sugar and spices, and soft baked apples, these scones are simply incredible. They are nutty pieces of heaven.
ingredients:
- 1 1/2 cups raw almonds
- 3 tablespoons organic cane sugar
- Dash of sea salt
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 Granny Smith apple, cored and chopped
- 1 tablespoon fresh grated ginger
- 1 free-range organic egg
- 1 tablespoon organic apple cider vinegar

First make your almond meal by processing the raw almonds in a food processor. Pulse until they get to be a fine, sandy texture. Don't pulse too much or you'll end up with almond butter!
Preheat your oven to 375 degrees F.
Add the sugar to the almond meal mixture and pulse quickly to combine. Transfer the almond sugar meal to a large bowl and add the salt, baking powder, cinnamon and nutmeg. Whisk together and add the chopped apple. Fold the apple into the dry ingredients so the pieces are coated.
In a separate small bowl, combine the grated ginger, organic egg and vinegar and whisk together so it's almost like a scrambled egg batter. Add the liquid mixture to the dry ingredients and stir together. It looks like it won't be enough liquid, but trust me, just give it a little time.
Once you have a thick batter, scoop it out of the bowl and shape it into a ball. Place the ball on a cutting board lined with parchment paper and flatten it out to 1/2 inch think. Slice like a pizza into 8 equal pieces.
On a baking sheet also lined with parchment, place the triangles a small distance apart and place in the center of the oven. Bake until they are golden brown, about 11 minutes.
Serve with hot mint tea or drizzled with a cinnamon glaze.
